While washing all produce before cutting into it is a basic element of kitchen hygiene, many people assume washing fruits and vegetables with peels and rinds to be unnecessary. Although intuitive, this can be a hazardous mistake as dangerous pathogens and pesticide residue can be carried by knife blades from the surface of the skin into the flesh, contaminating the produce.
